Chicken Caesar SaladThe Cabin Restaurant specializes in traditional Cajun and Creole cuisine. Many of its dishes are are very filling and quite a few are fried (but you always have the option to get your seafood blackened or broiled!). However there are several items on the menu that are healthy! One of them is our Chicken Caesar Salad. Although the Chicken Caesar Salad is not original to The Cabin and can be found on the menus of most restaurants in the United States, we do add a slight Cajun theme to it.

Recently, Chef Troy Mendoza changed the recipe for our Caesar dressing, and it is absolutely delicious! I’ve listed both recipes for you below (for more Cajun & Creole recipes, please purchase The Cabin Cook Book!).

CAESAR DRESSING

6 cups oil
3 cloves garlic
1 ½ cup parmesan
1 ½ teaspoon salt
½ teaspoon dry mustard
½ teaspoon black pepper
2/3 cup lemon juice
4 eggs
4 dashes of Worcestershire sauce
2 oz anchovy

Combine all ingredients in a blender except oil and anchovy. Blend well

Slowly add oil till thick.

Blend in Anchovy

CHICKEN CAESAR SALAD

1 ea. 6 oz. Chicken breast (boneless, skinless)
8 or 10 Seasoned croutons
1 oz. Parmesan cheese
3 cups Lettuce blend
2 oz. Caesar dressing

Method

Season the chicken with Cajun seasoning and grill until done. THen slice the chicken against the grain.

Toss the lettuce with the dressing first before plating.

Place the lettuce on the plate and top with the chicken

Sprinkle the parmesan cheese and scatter the croutons on top. Serve cold
